6-pound first-cut beef brisket
3 tablespoons corn oil
8 medium onions, thickly sliced
3 tablespoons tomato paste
2 teaspoons all-purpose flour
3 garlic cloves, minced
1 carrot, peeled and chopped
Kosher salt, to taste
Freshly ground black pepper, to taste
Instructions
Preheat your oven to 350°F (175°C).
Dust the brisket with flour and season generously with freshly ground black pepper.
Heat corn oil in a large skillet over medium-high heat. Brown the brisket on all sides, about 4-5 minutes per side. Transfer to a large baking dish.
In the same skillet, sauté sliced onions until deep golden brown, about 10 minutes. Layer over the brisket in the baking dish.
Spread tomato paste over the brisket. Add minced garlic, chopped carrot, and season with kosher salt and freshly ground black pepper.
Cover the baking dish tightly with aluminum foil. Cook in the preheated oven for 1.5 hours. Remove foil, slice brisket, return to dish, cover again, and continue cooking at 325°F (165°C) for an additional 1.5 to 2 hours, or until the meat is tender.
Let the brisket rest for a few minutes before serving.
