Ingredients
- 1/4 cup coarse ground Dijon mustard
- 3 tablespoons honey
- 1 tablespoon canola oil
- 1/2 shallot (diced)
- 2 tablespoons olive oil
- 2 tablespoons chopped fresh rosemary
- 1 tablespoon freshly squeezed lemon juice
- 1 1/2 pounds chicken tenderloins
- Kosher salt and pepper to taste
Instructions
- In a medium mixing bowl, whisk together Dijon mustard, diced shallot, honey, olive oil, rosemary, lemon juice, salt, and pepper. Reserve half of the marinade in the refrigerator for later.
- Place chicken tenderloins in a large Ziploc bag or bowl and coat with the remaining marinade. Marinate for at least 2 hours or up to overnight.
- Preheat your grill to medium heat.
- Brush the marinated chicken with canola oil and season lightly with salt and pepper.
- Grill the chicken for about 8 minutes total, turning occasionally until the internal temperature reaches 165°F.
