  • 1/4 cup coarse ground Dijon mustard
  • 3 tablespoons honey
  • 1 tablespoon canola oil
  • 1/2 shallot (diced)
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh rosemary
  • 1 tablespoon freshly squeezed lemon juice
  • 1 1/2 pounds chicken tenderloins
  • Kosher salt and pepper to taste

Instructions

  1. In a medium mixing bowl, whisk together Dijon mustard, diced shallot, honey, olive oil, rosemary, lemon juice, salt, and pepper. Reserve half of the marinade in the refrigerator for later.
  2. Place chicken tenderloins in a large Ziploc bag or bowl and coat with the remaining marinade. Marinate for at least 2 hours or up to overnight.
  3. Preheat your grill to medium heat.
  4. Brush the marinated chicken with canola oil and season lightly with salt and pepper.
  5. Grill the chicken for about 8 minutes total, turning occasionally until the internal temperature reaches 165°F.
  6. During the last few minutes of grilling, brush with reserved marinade for added flavor.
