These salmon patties are a delicious and healthy option for a quick meal. Made with fresh salmon, vegetables, and a crispy Panko coating, they are packed with flavor and protein. Perfect for a weeknight dinner or as a tasty appetizer.

  • 2 large eggs (lightly beaten)
  • 1 lb fresh salmon filet
  • 1 cup Panko bread crumbs
  • 1 medium yellow onion (1 cup, finely diced)
  • 1 tsp Worcestershire sauce
  • 3 Tbsp mayonnaise
  • ½ red bell pepper (seeded and diced)
  • ¼ cup parsley (finely minced)
  • ½ tsp black pepper (or to taste)
  • 3 Tbsp unsalted butter (divided)
  • 3 Tbsp olive oil (divided)
  • 1 ½ tsp garlic salt (to taste)

Instructions

  1. Preheat oven to 425°F and prepare a baking sheet with parchment paper. Bake salmon for 10-15 minutes until cooked through, then flake and cool.
  2. Sauté diced onion and bell pepper in olive oil and butter until golden and softened, about 7-9 minutes.
  3. In a mixing bowl, combine flaked salmon, sautéed vegetables, bread crumbs, eggs, mayonnaise, Worcestershire sauce, garlic salt, black pepper, and parsley. Mix well.
  4. Form the mixture into patties about 2 inches wide and ⅓ to ½ inch thick.
  5. Heat oil and butter in a non-stick pan and cook the patties for 3-4 minutes on each side until golden brown.
