Old Fashioned Potato Candy is a delightful treat that combines the unique flavor of mashed potatoes with creamy peanut butter and powdered sugar. This nostalgic candy is easy to make and perfect for sharing with friends and family. Enjoy the sweet, rich taste of this homemade confection that brings back memories of simpler times.

Ingredients

Scale
  • 6 cups powdered sugar
  • 1/2 cup russet potato, mashed and cooled
  • 1/3 cup creamy peanut butter
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt

Instructions

  1. In a large bowl, use an electric mixer to beat the mashed potato, milk, vanilla, and salt on medium speed for 2 minutes.
  2. Gradually mix in powdered sugar, 1 cup at a time, until a thick dough forms. Add more powdered sugar if needed, 1 tablespoon at a time, until the dough reaches a slightly thicker than cookie dough consistency.
  3. Form the dough into a ball and dust it with powdered sugar. Roll out the dough on a sheet of wax or parchment paper into a 1/8-inch thick rectangle, trimming it to a 10×12-inch size.
  4. Generously sprinkle powdered sugar over the rolled-out dough. Place another piece of parchment paper over the dough, then invert the rectangle and remove the top piece of parchment paper.
  5. Evenly spread peanut butter over the dough. Roll the dough tightly from the long side to form a jelly-roll style log, using the parchment paper to guide it. Wrap the log in parchment paper and freeze for 1 hour.
  6. After chilling, unwrap the log and cut it into 1/4-inch thick slices. Serve and enjoy the delightful flavor of this Old Fashioned Potato Candy!
