2 pounds ground beef
4 slices bacon
½ cup diced pickles or pickle relish
½ white onion, diced
5 cloves garlic, minced
¼ cup cold water
2 tsp cornstarch
1 cup shredded cheese
15 to 20 egg roll or wonton wrappers
½ tsp salt
½ tsp pepper
Instructions
In a large skillet, cook the bacon until crispy. Remove and set aside. Leave the bacon drippings in the pan.
Add the diced onion and minced garlic to the skillet with the bacon drippings. Sauté until the onion becomes translucent.
Add the ground beef to the pan, crumbling it as you cook. Season with salt and pepper. Cook until the beef is fully browned and no longer pink. Drain any excess fat.
Chop the cooked bacon into pieces and stir it into the beef mixture. Add the diced pickles and shredded cheese, mixing until well combined.
In a small bowl, mix cornstarch and cold water to create a slurry. Using a pastry brush, lightly brush the edges of each egg roll wrapper with the slurry.
Place about 3 tablespoons of the beef mixture near one edge of each wrapper, leaving a ½-inch border on the sides. Fold in the sides and roll up the wrapper tightly.
Heat oil in a skillet to about ½ inch deep over medium heat. Once hot, carefully place the eggrolls in the oil. Fry, turning occasionally, until all sides are golden brown.
Remove the eggrolls from the oil and place them on paper towels or a cooling rack to drain. Continue frying until all eggrolls are cooked.
Serve with your favorite dipping sauce or mix ketchup with mayonnaise and pickle relish for a Big Mac-style sauce.
