This hearty and comforting casserole features layers of tender white potatoes, savory diced ham, and a creamy sauce, making it perfect for family dinners and special occasions.

  • 1 small onion, diced
  • 2 cups cooked ham, diced
  • 3 pounds white potatoes, sliced about 1/8" thick
  • 1/3 cup all-purpose flour
  • 1/3 cup butter
  • 3 cups milk
  • 1/2 cup chicken broth
  • 1/2 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup sharp cheddar cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
  2. In a medium saucepan, melt the butter over medium-low heat. Add the diced onion and cook until tender. Stir in the flour and thyme, and cook for 1-2 minutes until the mixture is slightly golden.
  3. Reduce the heat to low. Gradually whisk in the milk, a little at a time, to avoid lumps. Stir until smooth. Add the chicken broth, salt, and pepper. Bring to a boil, then reduce to a simmer and cook for 1 minute, allowing the sauce to thicken.
  4. Layer 1/3 of the sliced potatoes in the prepared baking dish. Top with 1/3 of the diced ham and 1/3 of the sauce. Repeat the layers twice, finishing with the remaining sauce on top.
  5. Cover the dish with aluminum foil and bake for 50 minutes. Remove the foil and bake for an additional 25-35 minutes, or until the potatoes are tender. If using cheese, sprinkle it on top during the last 15 minutes of baking.
  6. Let the dish cool for at least 15 minutes before serving.
