1 pound large shrimp, peeled and deveined
1 tablespoon fresh ginger, grated
1/2 teaspoon red pepper flakes
2 tablespoons olive oil
Juice of 1 lemon
Zest of 1 lemon
4 cloves garlic, minced
2 tablespoons honey
1/2 cup chicken or vegetable broth
Salt and pepper, to taste
Fresh parsley or cilantro, chopped (for garnish)
Instructions
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add minced garlic, grated ginger, and red pepper flakes. Sauté for 1-2 minutes until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Remove shrimp and set aside.
In the same skillet, add chicken or vegetable broth, lemon juice, lemon zest, and honey. Bring to a simmer and cook for 3-4 minutes, stirring occasionally, until the sauce slightly thickens.
Season the sauce with salt and pepper. Return the cooked shrimp to the skillet and toss to coat with the sauce.
Garnish with chopped parsley or cilantro and serve hot over rice or with crusty bread.
