1 teaspoon garlic powder
1 and 1/4 pounds skinless, boneless chicken breast
2 tablespoons lemon juice
3/4 teaspoon ground black pepper
3/4 teaspoon salt
1/2 teaspoon salt
1 cup long grain white rice
6 cloves garlic, minced
3 large carrots, peeled and diced
1 large onion, finely diced
8 cups chicken stock
2 tablespoons olive oil
1 cup water
1/3 cup fresh lemon juice
2 bay leaves
1/4 cup to 1/2 cup fresh dill, chopped
2 stalks celery, diced
1/2 teaspoon black pepper
1/3 cup finely grated Parmesan cheese
Instructions
Preheat your oven to 375°F (190°C). In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper. Place the chicken breast in a small baking dish, drizzle with the marinade, and toss to coat thoroughly. Bake for 28 minutes, flipping the chicken halfway through. Once cooked, let it cool slightly before shredding into small chunks. Set aside.
Cook the rice according to package instructions with the 1/2 teaspoon of salt. Once done, fluff with a fork and set aside.
In a large soup pot, heat the olive oil over medium heat. Add the diced carrots, celery, and onion. Cook, stirring occasionally, for 5-6 minutes until they begin to soften. Add the minced garlic and cook for another minute until fragrant. Season with salt and black pepper.
Pour in the chicken stock and water, then add the bay leaves. Increase heat to medium-high and bring the soup to a boil. Reduce the heat to a simmer and cook for 30 minutes, allowing the flavors to meld.
Stir in the shredded chicken and cooked rice, cooking for an additional 5 minutes. Add the lemon juice, fresh dill, and Parmesan cheese. Stir well and adjust seasoning if necessary.
Remove from heat and serve hot. If the soup thickens too much in the fridge, simply add a bit of chicken broth or water when reheating.
