Juice of 1½ lemons
⅓ cup granulated sugar (for drizzle)
1 cup (2 sticks) unsalted butter, softened
1 lemon, zested
Instructions
Preheat your oven to 350°F (175°C) and line an 8×4-inch loaf tin with parchment paper.
In a large mixing bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Sift in the self-rising flour, add the lemon zest, and mix until just combined.
Pour the batter into the prepared loaf tin and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
While the cake is baking, mix together the lemon juice and ⅓ cup of granulated sugar in a small bowl to create the drizzle.
