Lemon Squares are a delightful dessert featuring a buttery crust topped with a tangy lemon filling. Perfectly balanced between sweet and tart, these squares are ideal for any occasion, providing a refreshing treat that pairs wonderfully with tea or coffee.

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour (divided)
  • 4 large eggs
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 2 lemons
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a medium bowl, blend together 2 cups of flour, softened butter, and 1/2 cup powdered sugar until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of the prepared baking dish.
  3. Bake in the preheated oven for 15 to 20 minutes, or until the crust is firm and golden brown.
  4. In a separate bowl, whisk together the eggs, granulated sugar, 1/4 cup flour, baking powder, lemon juice, and lemon zest until smooth and well combined.
  5. Pour the lemon filling over the pre-baked crust. Return to the oven and bake for an additional 20 to 25 minutes, or until the filling is set and slightly golden on top.
  6. Allow the bars to cool completely in the pan before cutting into squares. Dust the top with powdered sugar just before serving.
