1/2 cup diced ham
1/2 cup shredded cheddar cheese
1/2 cup diced bell peppers (assorted colors)
1/4 cup diced red onion
1/4 cup chopped spinach
Salt and pepper to taste
Cooking spray or olive oil for greasing
Instructions
Preheat your oven to 375°F (190°C).
Grease a 12-cup muffin tin with cooking spray or olive oil.
In a large bowl, whisk the eggs until well beaten. Stir in diced ham, shredded cheddar cheese, diced bell peppers, red onion, and chopped spinach into the beaten eggs.
Season the mixture with salt and pepper according to your taste. Mix everything thoroughly.
Pour the egg mixture evenly into the prepared muffin cups, filling each about 2/3 full.
Bake in the preheated oven for approximately 18-20 minutes or until the tops are set and slightly golden.
Insert a toothpick into the center of a muffin. If it comes out clean, the muffins are done.
Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
