This Philly Cheesesteak Baked Potato combines the classic flavors of a cheesesteak with the comforting heartiness of a baked potato. Loaded with tender steak, sautéed peppers, onions, and melted provolone cheese, it’s a satisfying meal perfect for any occasion.

Ingredients

  • 4 large baking potatoes
  • 1 tablespoon olive oil
  • 1 lb thinly sliced steak (ribeye or sirloin)
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 8 slices provolone cheese
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bake the potatoes directly on the oven rack for 45-60 minutes, or until they are tender.
  3. While potatoes are baking, heat olive oil in a skillet over medium heat. Add sliced bell pepper and onion. Sauté until softened, about 5-7 minutes. Set aside.
  4. In the same skillet, cook the thinly sliced steak until browned. Season with salt and pepper. Set aside.
  5. Once baked, cut a slit in the top of each potato. Scoop out a portion of the insides to create space for the filling.
  6. Place a slice of provolone cheese inside each potato. Fill with the cooked steak, sautéed peppers, and onions. Top with another slice of provolone cheese.
  7. Return the filled potatoes to the oven. Bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and garnish with chopped fresh parsley. Serve hot.
