These Loaded Nachos are a guaranteed crowd-pleaser, combining the crunch of chips with rich, melty cheese and vibrant fresh toppings. Perfect for any casual occasion or a fun family meal.

  • 1 bag of tortilla chips
  • 1 cup cooked ground beef (optional)
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (canned or fresh)
  • 1 can kidney beans, drained and rinsed
  • 1 jalapeño, sliced (optional)
  • 2 large tomatoes, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup salsa
  • 1/4 cup sour cream
  • 1 lime, cut into wedges

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Spread a layer of tortilla chips evenly on a large baking sheet or oven-safe platter.
  3. Top the chips with half of the black beans, kidney beans, corn, and ground beef (if using).
  4. Sprinkle with half of the shredded cheddar and Monterey Jack cheeses.
  5. Add another layer of tortilla chips.
  6. Repeat the layering process with the remaining black beans, kidney beans, corn, and ground beef.
  7. Finish with the remaining shredded cheeses.
  8. Place the nachos in the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
  9. While the nachos are baking, prepare the fresh toppings by dicing the tomatoes, chopping the red onion and cilantro, and dicing the avocado.
  10. Once baked, remove the nachos from the oven and top with the diced tomatoes, chopped red onion, cilantro, and avocado.
  11. Add jalapeño slices if desired, and serve with a dollop of sour cream and salsa on the side.
  12. Garnish with lime wedges and enjoy immediately while warm and cheesy.
