Bacon and Cheese Sloppy Joes are a delicious twist on the classic sloppy joe, combining savory ground beef with crispy bacon and melted sharp cheddar cheese. This hearty dish is perfect for a quick weeknight dinner or a casual gathering, served on toasted brioche buns for added flavor and texture.

  • 1 1/2 pounds ground beef
  • 8 slices bacon, chopped
  • 1/2 yellow onion, chopped
  • 1/2 cup ketchup
  • 1/4 cup tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1/2 cup beef broth
  • 2 cups sharp cheddar cheese, cubed
  • 6 brioche buns

Instructions

  1. In a large skillet over medium-high heat, cook the chopped bacon for 2-3 minutes until crispy but still bendable. Remove bacon from the pan and drain excess fat, leaving about 2 tablespoons.
  2. Add chopped onions to the skillet and cook for 4-5 minutes until softened.
  3. Lower the heat to medium. Add ground beef to the skillet and cook, breaking it apart into chunks about the size of a raspberry. Cook until well browned, about 5-6 minutes.
  4. Stir in ketchup, tomato paste, Worcestershire sauce, Dijon mustard, and beef broth. Mix well and continue cooking until the sauce starts to thicken and become 'sloppy,' about 5-6 minutes.
  5. Just before serving, add cubed cheddar cheese and cooked bacon crumbles to the skillet. Stir slightly to melt the cheese into the mixture.
  6. Toast the brioche buns.
  7. Spoon the sloppy joe mixture onto the toasted buns. Top with additional bacon if desired.
