  • 8 slices sourdough bread
  • Softened butter, for bread
  • 3 cups shredded mozzarella
  • 1 cup crumbled feta
  • 1 (16-oz.) jar roasted red peppers, drained and chopped
  • 1/2 cup pitted kalamata olives, halved
  • 2 tablespoons freshly torn dill

Instructions

  1. Butter one side of each sourdough bread slice. Place 4 slices butter-side down on a clean surface.
  2. On each bread slice, layer shredded mozzarella, crumbled feta, chopped roasted red peppers, halved kalamata olives, and torn dill.
  3. Top each with a remaining bread slice, butter-side up, creating 4 sandwiches in total.
  4. Heat a large skillet over medium heat. Place one sandwich into the skillet and cook until the bread is golden and the cheese is melted, about 2-3 minutes per side. Repeat with the remaining sandwiches.
  5. Once cooked, slice the sandwiches if desired and serve hot.
