2 tbsp vegetable oil
3 cloves garlic, minced
1/2 cup shredded carrots
1 lb shrimp, peeled and deveined
8 oz rice noodles
1 cup bean sprouts
1/4 cup chopped green onions
2 eggs, lightly beaten
1/4 cup crushed peanuts
1 tbsp soy sauce
3 tbsp tamarind paste
1/4 cup fish sauce
2 tbsp brown sugar
1 tbsp rice vinegar
Instructions
In a small bowl, mix together fish sauce, tamarind paste, brown sugar, soy sauce, and rice vinegar until well combined.
Cook rice noodles according to package instructions, then drain and set aside.
Heat vegetable oil in a large pan over medium-high heat. Add minced garlic and sauté until fragrant.
Add shrimp to the pan and cook until pink, about 2-3 minutes.
Push shrimp to one side of the pan and add lightly beaten eggs. Scramble until cooked, then mix with the shrimp.
Add cooked noodles, prepared sauce, bean sprouts, shredded carrots, and chopped green onions. Toss everything together until well combined and heated through.
