  • ¼ cup ketchup
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 3 tablespoons dill pickle relish
  • 2 pounds ground beef (80/20)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon canola oil
  • 6 slices American cheese
  • Brioche hamburger buns
  • Romaine or shredded lettuce
  • Sliced tomato
  • Sliced red onion
  • Dill pickle chips

Instructions

  1. In a small bowl, whisk together the mayonnaise, ketchup, dill pickle relish, and Dijon mustard. Set aside.
  2. In a large bowl, mix the ground beef with 1 ½ teaspoons salt and 1 ½ teaspoons pepper until well combined. Gently form the mixture into 6 patties, each about 1 inch thick.
  3. Heat the canola oil in a large cast-iron skillet over medium-high heat. Add the patties and cook for about 3-5 minutes per side, or until cooked to your desired doneness. Place a slice of American cheese on each patty during the last minute of cooking.
  4. Toast the brioche buns if desired. Spread the burger sauce on the bottom half of each bun. Place a cooked patty on each bun, then top with lettuce, tomato, red onion, and dill pickle chips. Cover with the top half of the bun and serve immediately.
