2 chicken breasts, chopped into small pieces
1 onion, finely chopped
1 cup cheddar cheese, shredded
3 cups chicken broth (low sodium)
¾ cup uncooked rice
10 oz cream of chicken soup (1 can)
1 tablespoon olive oil
2 cups broccoli florets
4 garlic cloves, minced
¼ teaspoon black pepper
¼ teaspoon salt
1 tablespoon chopped parsley (for garnish)
Instructions
Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent. Add the chopped chicken pieces, salt, and pepper. Cook until the chicken is browned and cooked through. Add minced garlic and cook for an additional 30 seconds.
Stir in the uncooked rice, cream of chicken soup, and 2 cups of chicken broth. Bring to a boil, then reduce heat and simmer, covered, for about 15 minutes, or until the rice is fully cooked. You can add more broth if needed.
Mix in the broccoli florets and shredded cheddar cheese. Continue to cook for another 2 minutes, until the broccoli is tender and the cheese is melted.
Transfer the mixture to a baking dish, top with additional cheese if desired, and place under the broiler until the cheese is bubbly and golden brown. Garnish with chopped parsley before serving.
