Experience the vibrant flavors of our Thai Chicken Salad, a dish that perfectly balances fresh vegetables, tender chicken, and a creamy peanut dressing. This colorful salad is not only quick to prepare—taking just 20 minutes—but also adaptable for a variety of occasions, whether as a main meal or a delightful side. Each bite is packed with crunch from peppers, scallions, and peanuts, combined with the rich taste of peanut butter and sesame oil in the dressing. Ideal for meal prep, this salad can be made ahead and stored for easy lunches throughout the week.

Ingredients

Scale
  • 1 (8-ounce) package raw coleslaw mix
  • 3 cups shredded cooked chicken
  • 5 scallions, thinly sliced
  • 1 red bell pepper, cored and very thinly sliced lengthwise then cut in half widthwise
  • 1 jalapeño, very thinly sliced widthwise or diced
  • 1/2 cup roasted peanuts, roughly chopped
  • 1/2 cup creamy peanut butter
  • 1/4 cup toasted sesame oil
  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 1 tablespoon sriracha
  • 1 teaspoon table salt

Instructions

  1. In a large mixing bowl, combine coleslaw mix, shredded chicken, scallions, red bell pepper, jalapeño, and chopped peanuts.
  2. In a medium microwave-safe bowl, combine all dressing ingredients except sesame oil. Microwave for 15 seconds until the peanut butter softens.
  3. Whisk in sesame oil until smooth and fully combined.
  4. Pour the dressing over the salad mixture and toss gently to combine.
  5. Serve immediately or chill before serving for enhanced flavors.
