  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 4 garlic cloves, minced
  • 1 onion, sliced
  • 1 cup (250ml) BBQ sauce
  • 2.5 kg (5.5 lbs) beef brisket
  • 1/4 cup (60ml) apple cider vinegar
  • 1 cup (250ml) beef stock
  • Salt and pepper to taste
  • 1 tbsp Worcestershire sauce
  • 2 tbsp brown sugar
  • 1 tsp dried thyme

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sear the brisket on all sides until browned. Transfer to the slow cooker.
  2. In the same skillet, add the sliced onion and minced garlic. Cook until softened.
  3. Pour the beef stock, BBQ sauce, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, and thyme into the skillet. Stir to combine and bring to a simmer.
  4. Pour the sauce mixture over the brisket in the slow cooker. Season with salt and pepper.
  5. Cover and cook on low for 8-10 hours, or until the brisket is tender.
  6. Remove the brisket from the slow cooker and let it rest for 10 minutes before slicing. Serve with the sauce.
