1 tablespoon fresh ginger, minced
1 cup fresh pineapple, finely chopped
2 garlic cloves, minced
1 teaspoon red chili flakes
1/4 cup white vinegar
2 teaspoons cornstarch
2 tablespoons soy sauce
2 tablespoons water (additional for cornstarch)
1/4 cup honey
1/2 cup water
Salt to taste
Instructions
In a saucepan over medium heat, combine the pineapple, 1/2 cup water, white vinegar, honey, soy sauce, ginger, and garlic. Bring the mixture to a simmer.
Reduce the heat and let it simmer for about 10 minutes, or until the pineapple becomes tender.
In a small bowl, dissolve the cornstarch in 2 tablespoons of water to create a slurry.
Stir the cornstarch slurry into the simmering sauce.
Add the red chili flakes and salt to taste. Continue to simmer for another 5 minutes, or until the sauce thickens.
Remove from heat and allow the sauce to cool. It will thicken further as it cools.
