2 lbs lamb shoulder, cut into 1-inch cubes
1/4 cup olive oil
3 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tbsp fresh thyme, chopped
1 tbsp fresh rosemary, chopped
1 tsp ground cumin
1 tsp ground coriander
2 tbsp lemon juice
Salt and pepper, to taste

Instructions
In a large bowl, mix together the minced garlic, olive oil, lemon juice, chopped rosemary, thyme, and parsley. Stir in the ground cumin, coriander, salt, and pepper. Add the lamb cubes and toss until coated. Cover and refrigerate for at least 2 hours.
If using wooden skewers, soak them in water for 30 minutes. Thread the marinated lamb cubes onto the skewers, leaving gaps for even cooking.
Preheat the grill to medium-high heat. Grill the skewers for about 8-10 minutes, turning occasionally, until the lamb reaches your desired doneness.
Transfer the skewers to a serving platter and garnish with additional chopped parsley if desired. Serve with dipping sauces.
