  • 6 flour taco-sized tortillas
  • 56 ears of corn (husked)
  • 3/4 cup mayonnaise
  • 3/4 cup sour cream
  • 1/2 cup pickled jalapenos
  • 2 tablespoons juice from pickled jalapenos
  • 1 tablespoon lime juice, fresh
  • 3/4 cup cilantro leaves (large stems removed)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 garlic clove, minced
  • 1 lime, juiced and zested
  • 1/3 cup mayonnaise for street corn topping
  • 1/3 cup sliced scallions
  • 1/3 cup grated cojita cheese
  • 1 jalapeno, diced
  • 1/21 tsp chili powder
  • 1/21 tsp Tajin
  • 1/4 tsp salt
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a pan over medium-high heat and sauté corn kernels until slightly charred (about 5-7 minutes). Transfer to a bowl.
  2. Mix charred corn with mayonnaise, minced garlic, lime juice, scallions, grated cheese, cilantro, diced jalapeno, chili powder, Tajin, and salt.
  3. In another bowl, whisk together mayonnaise, sour cream, cilantro leaves, pickled jalapenos with their juice, garlic powder, salt, and lime juice.
  4. Heat a cast iron skillet or griddle over medium-high heat. Form hamburger patties (¼ pound each) and season with salt and pepper. Cook for about 3-4 minutes on one side before flipping.
  5. Warm tortillas briefly before assembling tacos with the smash burger topped with street corn mix and jalapeno ranch sauce.
