  • 1 teaspoon white sugar
  • 1 teaspoon brown sugar
  • 2 tablespoons vegetable oil
  • 1 pound skinless, boneless chicken thighs, coarsely chopped
  • ¼ cup sliced shallots
  • 4 cloves garlic, minced
  • 2 tablespoons minced Thai chilies
  • 1 cup very thinly sliced fresh basil leaves
  • 2 cups hot cooked rice

Instructions

  1. Gather all ingredients and prepare them for cooking.
  2. In a bowl, whisk together chicken broth, oyster sauce, soy sauce, fish sauce, white sugar, and brown sugar until well blended.
  3. Heat a large skillet over high heat and drizzle in vegetable oil.
  4. Add the chopped chicken and stir-fry until it loses its raw color, about 2 to 3 minutes.
  5. Stir in shallots, garlic, and sliced chilies, cooking on high heat until juices start to caramelize, about 2 to 3 more minutes.
  6. Add about a tablespoon of the sauce mixture to the skillet and cook until it begins to caramelize, about 1 minute.
  7. Pour in the remaining sauce and cook until it deglazes the pan and glazes onto the meat, about 1 to 2 more minutes.
  8. Remove from heat and stir in the basil, cooking until wilted, about 20 seconds.
  9. Serve hot over cooked rice.
