This Sriracha Lime Prawn Linguine is a delightful dish that combines the sweetness of prawns with the zesty kick of lime and the heat of sriracha. Perfectly cooked linguine is tossed in a creamy sauce, making it a flavorful meal that’s quick and easy to prepare.

Ingredients

  • 200g raw king prawns, peeled and deveined
  • 300g linguine pasta
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 red chili, finely chopped
  • 100ml double cream
  • 2 tbsp sriracha sauce
  • Zest and juice of 1 lime
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the linguine according to package instructions until al dente. Drain and set aside, reserving a splash of pasta water.
  2. Heat olive oil in a large pan over medium heat. Add the minced garlic and chopped red chili. Sauté for 1-2 minutes until fragrant.
  3. Add the prawns to the pan. Cook for 2-3 minutes, or until they turn pink and opaque.
  4. Stir in lime zest, lime juice, and sriracha sauce. Cook for an additional minute.
  5. Pour in the double cream and stir well to combine. Let the sauce simmer for 2-3 minutes, or until it slightly thickens.
  6. Add the cooked linguine to the pan. Toss everything together to coat the pasta evenly with the sauce. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.
  7. Season with salt and pepper to taste. Garnish with freshly chopped parsley.
  8. Serve hot and enjoy!
