  • 1 lb ground beef
  • 1 can diced tomatoes, drained
  • 1/2 cup chopped cilantro
  • 1 tsp cumin
  • 2 scallions, sliced
  • 1 lime, juiced
  • 1/2 tsp pepper
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 1 tsp paprika
  • 1/4 cup sugar
  • 8 tortillas
  • 1 cup shredded cheddar cheese
  • 1 avocado, sliced
  • 1/2 red onion, diced
  • 2 jalapeños, diced
  • 1 cup diced tomatoes
  • 1 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat vegetable oil in a large skillet over medium heat. Add ground beef, red onion, jalapeños, and garlic. Cook until the beef is browned. Stir in paprika, cumin, salt, and pepper. Cook for another 5 minutes. Mix in diced tomatoes and cook for an additional 5 minutes.
  3. Cut tortillas into smaller circles. Spoon the beef mixture onto each tortilla circle.
  4. Arrange the filled tortillas in a ring on a baking sheet, overlapping slightly. Sprinkle shredded cheddar cheese and sliced scallions on top.
  5. Bake in the preheated oven for 15 minutes or until the cheese is melted and the tortillas are golden brown.
  6. In a bowl, combine drained diced tomatoes, scallions, chopped cilantro, sugar, and lime juice.
  7. Serve the taco ring with homemade salsa, sour cream, and avocado slices. Garnish with additional cilantro if desired.
