  • 2 salmon fillets (about 6 oz each)
  • 12 large shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chicken or vegetable broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sprinkle Cajun seasoning evenly over both sides of salmon fillets and shrimp.
  2. Heat olive oil in a large skillet over medium-high heat. Cook salmon fillets for about 4 minutes on each side until cooked through. Remove and set aside. In the same skillet, cook shrimp for about 2 minutes on each side until pink and opaque. Remove and set aside.
  3. If needed, add more oil to the skillet. Sauté bell peppers, onion, and garlic until they start to soften.
  4. Add cherry tomatoes and broth to the skillet. Simmer for about 5 minutes until vegetables are tender.
  5. Return salmon and shrimp to the skillet to warm through. Season with salt and pepper, garnish with parsley, and serve immediately.
