  • 2 pounds ground beef
  • 1 cup Italian panko crumbs
  • ½ cup yellow onion, chopped
  • ⅓ cup milk
  • ½ cup grated Parmesan cheese
  • 3 large eggs
  • 9 sticks mozzarella string cheese
  • 1 cup BBQ sauce
  • 1 tablespoon honey
  • 1 tablespoon brown sugar

Instructions

  1. Preheat your smoker to 250°F.
  2. In a mixing bowl, combine ground beef, panko crumbs, chopped onion, milk, Parmesan cheese, salt, eggs, beef seasoning, pepper, and garlic powder. Mix gently without overmixing.
  3. Chill the mixture in the freezer for about 15 minutes.
  4. Cut each mozzarella stick into fifths.
  5. Scoop out meat mixture with a cookie scoop, form a ball, insert a piece of cheese inside, and seal completely.
  6. Place meatballs on an oiled wire rack. Smoke for approximately 35-40 minutes.
  7. While smoking, mix BBQ sauce with honey and brown sugar in a small bowl.
  8. After smoking, brush each meatball with the BBQ glaze and cook for an additional 10 minutes until they reach an internal temperature of 165°F.
