  • 1 cup sour cream
  • 1 ½ cups sliced mushrooms
  • 21 oz cream of chicken soup
  • 2 cups shredded cheddar cheese, divided
  • ½ cup chicken broth
  • 1 small sweet yellow onion, diced
  • 1 lb. penne pasta, cooked
  • 1 ½ lbs. boneless skinless chicken breasts
  • ¼ tsp. pepper
  • ½ tsp. dried leaf tarragon

Instructions

  1. In your slow cooker, combine the cream of chicken soup and chicken broth, stirring until smooth.
  2. Mix in the tarragon, pepper, mushrooms, and diced onions.
  3. Place the chicken breasts into the mixture, ensuring they're well coated.
  4. Cover the slow cooker and cook on LOW for 6 hours without opening the lid during the cooking time.
  5. About 20 minutes before the slow cooking time is up, cook the penne pasta to al dente according to the package directions. Drain and set aside.
  6. Using two forks, shred the chicken breasts directly in the slow cooker.
  7. Stir in the sour cream and half of the shredded cheddar cheese until well combined.
  8. Add the cooked penne pasta to the slow cooker, stirring to mix everything together.
  9. Sprinkle the remaining cheese over the top. Cover and cook on LOW for an additional 20 minutes until the cheese is melted and everything is heated through.
  10. Scoop out portions of the cheesy chicken penne and enjoy!
