This Sloppy Joe Casserole combines the classic flavors of a sloppy joe with a comforting casserole twist. Ground beef, zesty sloppy joe sauce, and gooey mozzarella cheese are topped with flaky biscuits, making it a perfect dish for family dinners or gatherings.

Ingredients

  • 1 tsp dried oregano
  • 1 lb cooked extra lean ground beef
  • 1 can of sloppy joe sauce (manwich) 398ml
  • 1.5 Tbsp melted reduced-calorie margarine
  • 2 cloves fresh garlic, diced
  • 1 cup diced onions
  • ⅔ cup light shredded mozzarella cheese
  • 1 7.5oz can of Pillsbury biscuits
  • Salt and pepper to taste

Instructions

  1. Cook the ground beef and diced onions in a pan over medium heat until the beef is fully cooked and the onions are tender. Drain any excess fat.
  2. Preheat your oven to 350°F (175°C). Spray a 9-inch square baking dish with cooking spray.
  3. Add the sloppy joe sauce to the cooked meat mixture, stirring well to combine. Let it simmer on low heat for 5 minutes.
  4. Pour the meat mixture into the prepared baking dish. Top with the shredded mozzarella cheese.
  5. Place 9 of the 10 biscuit dough pieces on top of the meat mixture. (You will have one extra biscuit.)
  6. Bake in the preheated oven for 14 minutes.
  7. Just before the baking time is up, melt the reduced-calorie margarine and mix in the diced garlic and dried oregano.
  8. Remove the dish from the oven and use a small spoon to drizzle the garlic butter over all the biscuits.
  9. Return the dish to the oven and bake for an additional 6-8 minutes, or until the biscuits are golden brown.
  10. Allow the casserole to cool slightly before serving.
