  • 2 cloves garlic, minced
  • ⅔ cup minced shallot
  • ⅔ cup minced fresh parsley
  • 1 cup olive oil
  • ½ cup red wine vinegar
  • 2 tsp chopped fresh basil
  • 2 tsp chopped fresh thyme
  • 2 tsp chopped fresh oregano
  • 2 tsp chopped cilantro
  • 1 jalapeno, finely chopped
  • 1 tsp sea salt
  • ⅛ tsp cayenne pepper
  • 1 package (16 ounces) jumbo shrimp, peeled and deveined, tail-on
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 3 lbs sirloin steak, cut into 1" cubes

Instructions

  1. In a bowl, combine the minced garlic, shallot, parsley, olive oil, red wine vinegar, basil, thyme, oregano, cilantro, jalapeno, sea salt, and cayenne pepper. Stir well and let the sauce sit at room temperature for two hours.
  2. If using wooden skewers, soak them in water for 1 hour. Preheat your grill to medium-high heat (about 425°F).
  3. Cut the sirloin steak into 1-inch cubes. Thread the steak cubes and shrimp onto the skewers alternately. Brush the skewers with olive oil and season lightly with salt and pepper.
  4. Place the skewers on the preheated grill. Cook for 8-10 minutes, turning every four minutes, until the shrimp are fully cooked and the steak reaches your desired level of doneness. Remove from heat.
  5. Drizzle the freshly prepared chimichurri sauce over the skewers and serve immediately.
