  • 1/2 cup diced persimmon
  • 1 tablespoon chia seeds
  • 1 kiwi, sliced
  • 1/2 cup blueberries
  • 1 tablespoon almond butter (optional)
  • 1 medium sweet potato
  • 1 tablespoon honey or maple syrup (optional)
  • 1/4 cup mixed nuts (pecans, almonds, walnuts)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potato thoroughly, poke a few holes in it with a fork, and bake it for about 45-50 minutes or until it's tender. Alternatively, you can microwave it for 5-8 minutes, turning it halfway through.
  2. Once the sweet potato is cooked, let it cool slightly. Peel the skin off and mash the flesh with a fork until smooth. Spoon the mashed sweet potato into a bowl.
  3. Arrange the blueberries, kiwi slices, and diced persimmon on top of the sweet potato mash. Sprinkle the mixed nuts and chia seeds over the fruits.
  4. Drizzle almond butter and honey or maple syrup over the bowl for extra flavor and sweetness if desired.
