1 cup heavy cream
1 small onion, chopped
4 cups broccoli florets
Salt and pepper to taste
1 garlic clove, minced
4 cups chicken or vegetable broth
2 cups shredded cheddar cheese
1 tbsp butter
Instructions
In a large pot, melt 1 tbsp of butter over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant.
Pour in the 4 cups of chicken or vegetable broth, then add the 4 cups of broccoli florets. Bring to a simmer and cook until the broccoli is tender, about 10-15 minutes.
Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend just partially, leaving some broccoli pieces whole.
Stir in the 2 cups of shredded cheddar cheese and 1 cup of heavy cream. Continue stirring until the cheese is melted and the soup is creamy.
Season with salt and pepper to taste. Adjust seasoning as necessary.
