This Easy Broccoli Cheese Soup is a comforting and creamy dish made with fresh broccoli, cheddar cheese, and heavy cream. It’s perfect for a cozy meal on a chilly day, offering a delightful blend of flavors and textures.

  • 1 cup heavy cream
  • 1 small onion, chopped
  • 4 cups broccoli florets
  • Salt and pepper to taste
  • 1 garlic clove, minced
  • 4 cups chicken or vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 tbsp butter

Instructions

  1. In a large pot, melt 1 tbsp of butter over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant.
  2. Pour in the 4 cups of chicken or vegetable broth, then add the 4 cups of broccoli florets. Bring to a simmer and cook until the broccoli is tender, about 10-15 minutes.
  3. Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend just partially, leaving some broccoli pieces whole.
  4. Stir in the 2 cups of shredded cheddar cheese and 1 cup of heavy cream. Continue stirring until the cheese is melted and the soup is creamy.
  5. Season with salt and pepper to taste. Adjust seasoning as necessary.
