  • 1 pound small new potatoes (halved)
  • 3 ears corn (cut into 6 rounds)
  • 12 ounces chicken sausage (sliced)
  • 1 pound raw jumbo shrimp (tails on or off)
  • 4 tablespoons butter (melted)
  • 4 cloves garlic (minced)
  • 1 tablespoon old bay seasoning
  • 1 teaspoon cajun seasoning
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Preheat oven to 425°F.
  2. In a mixing bowl, combine halved potatoes and corn; toss well and spread on a baking sheet.
  3. In another bowl, mix chicken sausage and shrimp.
  4. Melt butter and stir in garlic, old bay seasoning, and cajun seasoning.
  5. Coat potatoes and corn with half the butter mixture; bake for 18 minutes.
  6. Pour remaining butter mixture over sausage and shrimp; toss to coat.
  7. After 18 minutes, add sausage and shrimp to the baking sheet; return to oven for an additional 8-10 minutes until shrimp are opaque.
  8. Garnish with parsley and serve with lemon wedges.
