- 1 pound small new potatoes (halved)
- 3 ears corn (cut into 6 rounds)
- 12 ounces chicken sausage (sliced)
- 1 pound raw jumbo shrimp (tails on or off)
- 4 tablespoons butter (melted)
- 4 cloves garlic (minced)
- 1 tablespoon old bay seasoning
- 1 teaspoon cajun seasoning
- Fresh parsley for garnish
- Lemon wedges for serving
Instructions
- Preheat oven to 425°F.
- In a mixing bowl, combine halved potatoes and corn; toss well and spread on a baking sheet.
- In another bowl, mix chicken sausage and shrimp.
- Melt butter and stir in garlic, old bay seasoning, and cajun seasoning.
- Coat potatoes and corn with half the butter mixture; bake for 18 minutes.
- Pour remaining butter mixture over sausage and shrimp; toss to coat.
- After 18 minutes, add sausage and shrimp to the baking sheet; return to oven for an additional 8-10 minutes until shrimp are opaque.
- Garnish with parsley and serve with lemon wedges.
