  • 4 salmon fillets (6 oz each)
  • 1 package fajita seasoning
  • 3 bell peppers (sliced)
  • 1/2 large onion (thinly sliced)
  • 1 tablespoon olive oil
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons orange juice
  • 1 tablespoon brown sugar
  • 2 garlic cloves (minced)
  • 4 tablespoons butter (melted)
  • 1 1/2 tablespoons finely chopped cilantro

Instructions

  1. In a mixing bowl, combine fajita seasoning with salt and optional cayenne pepper. In another bowl, whisk together olive oil, lime juice, orange juice, soy sauce, brown sugar, minced garlic, and reserved salt for the marinade.
  2. Set aside 1 tablespoon of the marinade for vegetables. Marinate salmon fillets in remaining marinade for 30–60 minutes at room temperature.
  3. Preheat oven to 400°F (200°C). Line a baking sheet with aluminum foil and spray with cooking spray.
  4. Place sliced bell peppers and onions on one side of the baking sheet. Drizzle with reserved marinade and sprinkle with fajita seasoning; toss to coat.
  5. Roast vegetables for 5–10 minutes based on thickness. Stir halfway through.
  6. Move veggies aside and place marinated salmon on the other side of the sheet; rub with remaining fajita seasoning.
  7. Broil for an extra minute or two until slightly charred.
  8. Spoon melted Cilantro Lime Butter over salmon before serving.
