  • 1 teaspoon ground black pepper
  • 1/4 cup lemon juice
  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 1 bell pepper, cut into squares
  • 3 garlic cloves, minced
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine olive oil, soy sauce, lemon juice, minced garlic, dried oregano, and ground black pepper. Add the beef cubes and toss to coat. Cover and refrigerate for at least 2 hours to let the flavors meld.
  2. Thread the marinated beef, bell pepper squares, red onion wedges, and zucchini slices onto the soaked wooden skewers, alternating between beef and vegetables.
