2 tbsp olive oil
2 large onions, thinly sliced
1 lb ground beef
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
2 cups beef broth
1 cup shredded Gruyère cheese
Instructions
Heat olive oil in a skillet over medium heat. Add thinly sliced onions and cook, stirring occasionally, until caramelized and golden brown. Set aside.
In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, salt, pepper, and dried thyme. Mix until well combined. Shape into meatballs of desired size.
In the same skillet used for onions, brown the meatballs on all sides until cooked through. Remove meatballs from skillet and set aside.
Pour beef broth into the skillet with the caramelized onions. Bring to a simmer, scraping up any browned bits from the bottom of the skillet. Return the meatballs to the skillet and simmer in the onion broth for a few minutes until heated through and flavors meld.
Sprinkle shredded Gruyère cheese over the meatballs and onion sauce. Cover the skillet with a lid and let the cheese melt.
