2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup shredded sharp cheddar cheese
1/2 cup cold unsalted butter, cubed
1 cup buttermilk
1 cup cooked crab meat, chopped
2 tablespoons fresh chives, chopped
1/4 cup unsalted butter, melted
Juice of 1 lemon
1 tablespoon fresh parsley, chopped
Salt to taste
Instructions
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, combine flour, baking powder, baking soda, and salt. Add cubed cold butter and mix until it resembles coarse crumbs.
Stir in shredded cheddar cheese and chopped chives.
Pour in buttermilk and mix until just combined. Avoid overmixing.
Gently fold in chopped crab meat into the dough.
Drop heaping spoonfuls of dough onto the prepared baking sheet.
Bake for 12-15 minutes, or until golden brown.
While biscuits are baking, mix melted butter, lemon juice, parsley, and salt for the lemon butter.
Brush lemon butter over hot biscuits as soon as they come out of the oven.
