Ingredients

  • 4 bone-in pork chops, about 1 inch thick
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 slices of bacon, chopped
  • 1 large onion, sliced
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • Fresh thyme leaves for garnish

Instructions

  1. Season both sides of the pork chops with salt and pepper.
  2. In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and set aside, leaving the bacon grease in the skillet.
  3. Increase the heat to medium-high. Add the pork chops to the skillet and sear each side for about 4-5 minutes or until golden brown. Remove the pork chops from the skillet and set aside.
  4. In the same skillet, reduce the heat to medium. Add the olive oil, then the sliced onions and mushrooms. Cook, stirring occasionally, until the onions are translucent and the mushrooms are browned, about 6-7 minutes. Add the garlic and cook for an additional minute.
  5. Pour in the chicken broth to deglaze the skillet, scraping up any browned bits from the bottom. Stir in the heavy cream and bring to a simmer. Return the pork chops and cooked bacon to the skillet. Reduce the heat and simmer until the pork chops are cooked through and the sauce has thickened, about 10 minutes.
  6. Garnish with fresh thyme leaves before serving.
