2 lbs chicken, cut into pieces
2 tablespoons Jamaican curry powder
1 teaspoon salt
1 teaspoon black pepper
3 tablespoons cooking oil
1 large onion, chopped
4 cloves garlic, minced
1 tablespoon ginger, grated
3 cups water
2 potatoes, peeled and cubed
1 sprig thyme
1 scotch bonnet pepper, sliced (optional)
1 bell pepper, sliced
1/2 cup coconut milk
Instructions
Season the chicken pieces with Jamaican curry powder, salt, and black pepper.
Heat cooking oil in a large pot over medium heat. Add the seasoned chicken and brown until golden on all sides.
Add chopped onions, minced garlic, and grated ginger to the pot. Sauté until the onions are translucent and fragrant.
Pour in water, add cubed potatoes, thyme sprig, and sliced scotch bonnet pepper. Bring to a boil, then reduce to a simmer. Cover and cook for 30 minutes until chicken is tender and potatoes are cooked.
Stir in sliced bell pepper and coconut milk. Simmer for an additional 10 minutes to meld flavors together.
Taste and adjust seasoning if needed. Serve hot, garnished with fresh herbs if desired.
