Ingredients

  • 1 tablespoon lemon zest
  • 200 ml freshly squeezed lemon juice
  • 500 ml water
  • 150 g granulated sugar
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Squeeze 4-5 lemons to get around 200 ml of fresh lemon juice. Strain the juice to remove any seeds and pulp.
  2. In a saucepan, combine 500 ml water with 150 g granulated sugar. Heat over medium heat, stirring constantly until the sugar is fully dissolved. Remove from heat and let the syrup cool to room temperature.
  3. In a large bowl, combine the cooled syrup with the lemon juice, 1 tablespoon lemon zest, and 1 teaspoon vanilla extract (if using). Stir thoroughly to mix all ingredients evenly.
  4. Pour the lemon mixture into ice lolly molds, leaving a small gap at the top to accommodate expansion as they freeze. Insert the sticks into the molds.
  5. Place the molds in the freezer and freeze for at least 4-6 hours, or until completely solid.
  6. To release the ice lollies, briefly run the outside of the molds under warm water. Gently pull on the sticks to remove the lollies.
