  • 1 cup diced celery
  • 1 pound short pasta (such as rotini or penne)
  • 1 pint cherry tomatoes, halved
  • 1/2 cup thinly sliced radishes
  • 1/4 cup chopped fresh parsley
  • 2 teaspoons honey
  • 2 tablespoons Dijon mustard
  • 1/4 cup red wine vinegar
  • 1/2 cup extra-virgin olive oil
  • Salt and freshly ground black pepper
  • 1 cup diced cucumber

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions. Drain and set aside to cool.
