  • 2 ½ cups cake flour
  • 1 ½ cups sugar
  • ½ teaspoon salt
  • 2 ½ teaspoons baking powder
  • 1 ½ sticks unsalted butter (softened)
  • 4 large eggs
  • ¾ cup frozen pink lemonade concentrate (thawed)
  • ½ cup milk
  • 2 teaspoons lemon extract
  • Zest of 1 lemon
  • Pink food coloring gel

Instructions

  1. Preheat the oven to 350°F. Grease and flour two 8×2 inch round pans.
  2. In a mixing bowl, whisk together flour, sugar, salt, and baking powder until well combined.
  3. In another bowl, combine eggs, pink lemonade concentrate, lemon extract, zest, and milk.
  4. Using a mixer on low speed, add softened butter to the dry ingredients until mixture resembles coarse sand. Gradually add half of the egg mixture, then mix on medium speed for 1 ½ minutes until thick and fluffy. Mix in pink food coloring.
  5. Slowly add the remaining egg mixture in two batches, mixing for 20 seconds after each addition.
  6. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  7. In a mixing bowl, beat softened butter until smooth. Add cream cheese, lemon juice (if using), lemon extract, and lemon zest. Mix until well blended. Gradually add powdered sugar, beating until frosting is smooth and spreadable.
  8. Place one cake layer on a serving plate. Spread a layer of frosting over the top. Place the second cake layer on top and frost the top and sides of the cake with remaining frosting. Decorate as desired.
