4 small cucumbers (or 2 English cucumbers)
1 tablespoon sea salt
2 green onions, finely chopped
2 cloves garlic, minced
1 tablespoon gochugaru (Korean red pepper flakes)
1 tablespoon rice vinegar
1 tablespoon soy sauce
1 tablespoon sesame oil
1 teaspoon sugar
1 teaspoon toasted sesame seeds
Instructions
Wash the cucumbers and slice them thinly. Place them in a large bowl and sprinkle with sea salt. Toss to coat and let them sit for 15 minutes to draw out excess water. Rinse the cucumbers under cold water to remove the salt, then drain and gently squeeze out any remaining water.
In a separate bowl, combine the green onions, garlic, gochugaru, rice vinegar, soy sauce, sesame oil, and sugar. Mix well.
Add the cucumbers to the dressing mixture and toss to coat evenly. Sprinkle with toasted sesame seeds before serving.
