Ingredients

Scale
  • 12 graham crackers, crushed to fine crumbs
  • ¼ cup sugar
  • ½ cup butter, melted
  • 16 ounces cream cheese, at room temperature
  • ¾ cup sugar
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 8-ounce container Cool Whip topping
  • 1 ½ cups fresh strawberries, diced
  • Whipped cream and chocolate syrup or hot fudge sauce, for serving

Instructions

  1. Preheat oven to 375°F (190°C) and grease a pie dish.
  2. Combine graham cracker crumbs, ¼ cup sugar, and melted butter. Mix well and press into the bottom of the greased pie dish. Bake for 8-10 minutes until browned. Cool while preparing the next layer.
  3. In a blender or food processor, puree the strawberries until smooth. Set aside.
  4. In a bowl, beat cream cheese, lemon zest, vanilla extract, and ¾ cup sugar until smooth. Mix in pureed strawberries, then fold in Cool Whip topping until combined.
  5. Spread the mixture over the baked crust. Cover with plastic wrap and freeze for at least 4 hours.
  6. Before serving, let the cheesecake thaw slightly at room temperature for 20-30 minutes. Slice into wedges using a knife heated under hot water and dried off. Serve topped with whipped cream and chocolate syrup or hot fudge.
