1 cup chopped red cabbage
2 cups chopped cauliflower
1 cup chopped carrots
2 cups chopped broccoli
1.5 cups chopped fresh parsley
2 chopped celery stalks
1/2 cup chopped raw almonds
1/2 cup raw sunflower seeds
1/3 cup organic raisins
3 Tbsp olive oil
1/2 cup lemon juice
1 Tbsp grated fresh ginger
2 Tbsp clover honey
1/2 tsp sea salt
Instructions
In a jar, combine the olive oil, lemon juice, grated fresh ginger, clover honey, and sea salt. Shake well until fully blended.
Rinse all the vegetables thoroughly and pat them dry. Chop the red cabbage, cauliflower, carrots, broccoli, parsley, and celery stalks into bite-sized pieces.
Coarsely chop the raw almonds.
In a large bowl, toss together the chopped vegetables, almonds, raw sunflower seeds, and organic raisins until well mixed.
Pour the vinaigrette over the salad and toss to coat evenly. Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld together.
