Ingredients
Scale
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 tsp vanilla extract
1/2 cup buttermilk
1/2 cup fresh blackberries, chopped
1 cup cream cheese, softened
1/4 cup powdered sugar
2 tbsp lime juice
Zest of 1 lime
Fresh blackberries and lime zest for garnish
Instructions
Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. In a large bowl, beat butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract. Gradually add dry ingredients to the wet mixture, alternating with buttermilk. Begin and end with the dry ingredients. Fold in chopped blackberries.
Divide the batter evenly among cupcake liners, filling each about two-thirds full. Press a small dollop of cream cheese into the center of each cupcake. Bake for 18-20 minutes until a toothpick inserted into the center comes out clean. Let cool completely on a wire rack.
Beat cream cheese and softened butter until smooth. Gradually add powdered sugar, beating until light and fluffy. Mix in lime juice and lime zest until well combined.
Frost the cooled cupcakes with the cream cheese frosting. Drizzle with extra lime juice and sprinkle with lime zest. Top each cupcake with a fresh blackberry for garnish.
