1/4 cup all-purpose flour
2 tablespoons olive oil
1 small onion, finely chopped
3 garlic cloves, minced
1 cup cherry tomatoes, halved
1/2 cup vegetable broth
1/4 cup fresh basil, chopped
Salt and freshly ground black pepper, to taste
4 cod fillets (6 ounces each)
Instructions
Season the cod fillets with salt and pepper, then lightly dust them with flour.
Heat olive oil in a large skillet over medium-high heat. Add the cod fillets and sear until golden brown on both sides, about 3-4 minutes per side. Remove the cod from the skillet and set aside.
In the same skillet, add the finely chopped onion and sauté until translucent. Add the minced garlic and cook for another minute.
Add the cherry tomatoes to the skillet and cook until they begin to soften and break down.
Pour in the vegetable broth, bring to a simmer, and let the liquid reduce by half.
Return the seared cod fillets to the skillet. Cover and simmer for 5-7 minutes, or until the cod is cooked through and flakes easily with a fork.
Sprinkle the dish with freshly chopped basil before serving.
