  • ¾ cup salsa (or 10 ounces Rotel Diced Tomatoes & Green Chilies, drained)
  • 4 chicken breasts (78 ounces each)
  • ½ cup Mexican cheese (or Monterey Jack, shredded)
  • Salt and pepper to taste
  • 1 cup diced bell peppers (any color)
  • 15 ounces black beans (drained and rinsed)
  • Cilantro, tomatoes, and jalapenos for garnish
  • ½ teaspoon chili powder
  • 2 cups whole kernel corn

Instructions

  1. Preheat your grill to medium-high heat.
  2. Prepare four large pieces of foil by spraying each with cooking spray. Place one chicken breast on each piece of foil.
  3. Season each chicken breast with chili powder, salt, and pepper.
  4. Evenly distribute the black beans, corn, bell peppers, and salsa over the chicken breasts.
  5. Fold the ends of the foil to create a sealed packet.
  6. Place the packets on the grill, vegetable side down, and cook for 10 minutes.
  7. Flip the packets and continue grilling for an additional 10-12 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F.
  8. Carefully open each packet and sprinkle shredded cheese over the chicken and vegetables.
  9. Place the packets on a baking pan and return to the grill just until the cheese melts.
  10. Garnish with cilantro, tomatoes, and jalapenos as desired. Serve hot.
