  • 8 sausages (Italian, bratwurst, or your favorite)
  • 3 cups chopped potatoes (1-inch pieces)
  • 3 cups chopped carrots (1-inch pieces)
  • 1 onion, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a large baking dish or sheet pan.
  2. In a large bowl, mix together the chopped potatoes, carrots, and onion. Drizzle with olive oil and sprinkle with dried thyme, dried rosemary, garlic powder, salt, and pepper. Toss to coat evenly.
  3. Spread the seasoned vegetables in the prepared baking dish or sheet pan. Arrange the sausages on top of the vegetables.
  4. Place in the oven and bake for 30-35 minutes, or until the sausages are fully cooked and the vegetables are tender and golden brown.
  5. While the bake is cooking, prepare the gravy. In a small saucepan, melt the butter over medium heat. Add the flour to the melted butter, whisking constantly to form a roux. Cook for 1-2 minutes until the roux is lightly golden. Gradually whisk in the beef broth, ensuring there are no lumps. Add Worcestershire sauce and season with salt and pepper. Simmer for 5-7 minutes, until the gravy has thickened.
  6. Once the bake is done, remove from the oven and transfer to serving plates. Pour the rich gravy over the sausage and vegetables.
